The grapes used to produce our 2007 Shannon Ridge Lake County Grenache were picked at the peak of ripeness. Using gentle punch downs during fermentation. We bleed off some juice to increase the skin-to-juice ratio to help intensify flavors and aroma. We blended in a small percentage of Tempranillo to brighten color and to lengthen the finish.
