The grapes used to produce our 2006 Shannon Ridge Lake County Cabernet Sauvignon were picked at full ripeness. We did a long maceration to soften tannins and improve flavors and mouth feel. We used gentle processing to keep tannin levels down. Blended with Petite Verdot to add another layer of complexity and depth, Aged in French oak for twenty months.
