The grapes used to produce our 2008 Shannon Ridge Home Ranch Cabernet Sauvignon were picked at the peak of ripeness. We did a long maceration to soften tannins and improve flavors and mouth feel. We used gentle processing to keep tannin levels down, Aged in French oak for twenty months.
